The best small joint for roasting - succulent, tender and with plenty of crackling. For on the bone roast, we cut through the chine bone to make carving easier. Note that French and Italian recipes rarely call for crackling, so ask for it to be supplied separately and roast until crisp for an indulgent cook’s treat.
